Strapped for Time, Strapped for Ideas

We are on the same wavelength. I just made pseudo Thai green curry rice salad: leftover rice; cilantro; cut up carrots; peanuts; mint, bound together with yogurt/mustard oil/soy sauce/curry paste dressing. It was okay but not filling enough! Now I am starving!
